Chicken Breast Brine



  • 6 cups water
  • 8-10 cups ice
  • 3/4 cup salt
  • 1/2 cup sugar
  • Up to 10 lbs boneless skinless chicken breast


Pour 4 cups of water into large pot with salt and sugar and heat until dissolved. Remove from heat, add 2 cups of water and all of the ice. Submerge chicken and cover pot. Let it sit for four hours +/-30 minutes.

Grilled chicken Dry rub



  • 1 part paprika
  • (if not brining) 1 part salt
  • (if not brining) 1/2 teaspoon kosher salt
  • 1/4 part onion powder
  • 1/4 part chili powder
  • 1/4 part ground black pepper
  • 1/8 part ground turmeric
  • 1/8 part cumin
  • 1/8 part garlic powder
  • 1/16 part cayenne
